Grape Origin:
Grapes coming from our vineyards in the Chianti district of Arezzo – Toscana.

Grape Harvest:
Manual, with accurate selection of the grapes.

Grapes:
Sangiovese, Canaiolo, Merlot, Cabernet, Montepulciano.
Wine-making procedure:
Traditional in red, with maceration of the pressed grapes – Metodo Ganimede.
Temperature control during fermentation.

Refinement:
10%  in small wooden boxes (barriques containing 225 litres)
70% in medium wooden boxes Slavonian Wood
20% preserved in stainless steel containers.
At the end of the ageing period (at least 12 months), the product is blended together and kept in steel containers so that it refines properly.

Food Matches:
It is a well-bodied and rare wine which is good for many occasions; it fits well with meat roasts, stews, game roasts and mature cheeses.

Temperature:
Suggested serving temperature 20° – 22° Celsius; it would be better to open the bottle one or two hours before serving.
